Last Friday, I got a huge box of lemons from Mrs. Cindy. It was packed! It also included a number of lemon recipes including the justly famous Shaker Lemon pie. When I thanked Mrs. Cindy for all those wonderful wonderful lemons on Monday, she said that her assistant Rhonda had packed a lot of lemons in just a few boxes, instead of a few lemons in many boxes.
So I have several other people's share of the Meyer lemons. If you live on the East Coast, and didn't receive any lemons and were expecting some, send me your Snail mail address and I will send you art of my booty.
I also got a big box of them last week, and then I got a smaller box yesterday with 6 more, so Cindy may have had her assistant pick more lemons and sent some out to others on the list.
So far I've made a batch of lemon curd and frozen a bunch of them whole. I need to zest/juice/freeze a bunch of them today.
We also sent some on to my granddaughter in Pittsburgh, but given how quick they're ripening I'm hoping they'll still be good by the time they get there.
Skeptic7, it's good to see you posting again, both here and at Zen's site, and to hear about your baking.
I received a big box last week as well, it made my day! I made a lemon cake. I'm going to do a "squeeze and freeze" on a number of them tomorrow.
Oh, and by the way, did you notice the CUBS WON THE WORLD SERIES!!!!!!!!!!
