Ginger Pear butter a la Olive

INSTRUCTIONS
Pears peeled,cored and sliced dipping in acidified water right away or sprinkle with fruit fresh as you go along.
Place cut up pears in a heavy bottomed pan, add lemon juice if it is about 10 pears use 2 Tbsp lemon juice.
Start cooking on low with the lid on. After pears are soft, puree or use a spud masher. Add sugar to taste, I cannot give you amounts here, you have to add 14 cup at a time and taste as you go. Now add 1/2 tsp ground ginger, taste test again add more ginger if you cannot taste it.
The smell of this is amazing I cannot live without making this everyear. Cook the pear butter on LOW, very important as it will stick and burn if the heat is up too high. Stir every so often.
The pear butter is done when it has cooked down by about half, if you are not sure if it is thick enough, take off the heat and put a spoonful on a dish and put in the freezer until cool. If it is thick then it is done, if not keep cooking. When it is getting that close to being done, watch carefully for burning.
