FRAN'S DATE NUT BREAD

I have received rave reviews from friends and family. This is based on two separate recipes that I combined and tweaked. Hope you like it as much as we did.
Yield: 2 Loaves
Notes: To prevent dates from sticking to knife when chopping, sprinkle a little bit of flour over dates
16 ounces pitted dates
1 1/2 cups walnuts, chopped
2 cups raisins
2 teaspoons baking soda
2 cups water, boiling
4 cups all purpose flour
2 cups sugar
2 teaspoons baking powder
2 each extra large egg
2 tablespoons butter
2 teaspoons cinnamon
1 teaspoon vanilla
1/4 teaspoon salt
1. Preheat oven to 350. Prepare loaf pans by spraying with nonfat spray.
2. Coarsely chop dates and combine with nuts, butter and raisins in a bowl. Sprinkle baking soda over this mixture.
3. Pour boiling water over the contents of bowl. Cover and set aside while mixing remaining ingredients.
4. Combine flour, sugar, baking powder, eggs, cinnamon, vanilla, salt and mix well. Combine with date mixture and mix well.
5. Turn into prepared pans and bake for 1 hour. Let rest for 10 minutes before turning out of pan. Cool before slicing.
