      Chocolate Coconut Candies

      3/4 c mashed potatoes
      1 pkg powdered sugar
      4 c flaked coconut
      1 t almond extract

      Mix all ingredients. Drop mixture by heaping teaspoonfuls onto waxed paper. Roll into balls, chill 1/2 - 1 hour or till firm. If mixture is too soft to form balls, chill before shaping. Dip in melted milk or semi-sweet chocolate.

      I like to melt 12 oz. chocolate with a walnut sized piece of Gulfwax. You can add more wax if it's too thick. Melt it in top of double boiler over simmering water. Drop on waxed paper to harden. You can freeze the balls so that dipping is fast and sets up quickly. Use either a toothpick or dipping fork.
