Celery is not my favorite vegetable but I do like it diced in potato salad and soups. I never liked it filled with cream cheese or peanut butter because celery is most times stringy. I saw online one day a woman 'stringing' celery. Have you ever done this or heard of it? Of course, I have no celery here here to try it.
I knew a lady that told me she used her potato peeler to peel the back of celery because of the strings and I've done this ever since especially for chicken salad and salads, I don't for cooked celery like in soups.I also like cream cheese and crushed pineapple in celery, good stuff.
Thanks, Joan. I'm going to do that next time I buy celery and that stuffing sounds good.
You can save the string for vegetable stock. I have a bag in the freezer that I throw any edible veggie parts that I don't eat into for stock.
Not all celery is stringy, but when it is, it is not great, so I will make a note to use a peeler when that happens.
