Caramel Candy

I begged for 3 years for this recipe. It is a yummy caramel candy and so delicious. A family man made this candy with his children every year at Christmas which I thought was so sweet. Hope that you love them like I do. Cheryl
2 c sugar
2 squares margarine or butter
1 1/2 c light Karo syrup
1 c evaporated milk
1 c more evaporated milk, heated
White chocolate for dipping
chopped peanuts
Mix the sugar, butter, Karo syrup and 1 cup evaporated milk in heavy pan and bring to boil. Boil for 5 minutes. Add 1 c of heated milk slowly to the boiling caramel so you don't stop the boil. Stirring constantly, cook to soft ball stage. This could take as long as 15-20 minutes more to finish cooking. I use a candy thermometer and cook to about 228 degrees then start checking it by using cold water to see if it will form a soft ball. When finished, take off heat and pour into buttered pan and let cool in refrigerator. I cut in small squares and put in the freezer before I dip them. Otherwise, they are too soft. Melt white chocolate and dip each caramel, then sprinkle with chopped peanuts while chocolate is still soft.
