      Bubba's Fajitas

      These fajitas are a favorite in our house and it is a recipe that folks always ask for as it is a sure-fire winner.

      1 pound boneless chicken, pounded but not too thinly
      1 clove garlic, chopped
      1 Tbs. chopped fresh cilantro
      1 teaspoon cumin
      1/3 cup Worcestershire sauce
      1/4 cup soy sauce
      1 tsp. Liquid smoke
      1 medium yellow onion, sliced in rings
      juice from 1 large lime
      pepper to taste
      green and yellow peppers

      guacamole or sliced avocado
      yellow rice- Goya’s Arroz Amarillo is nice and it is pretty if studded with black beans
      Warm flour tortillas
      Sour cream
      Salsa
      Grated cheddar
      Chopped iceberg lettuce
      Chopped tomatoes
      scallions

      Marinade chicken in a large container and leave in fridge overnight.

      Next day, remove meat, onions, peppers. Grill meat with reserve marinade on BBQ. Sauté onions and peppers. Boiling marinade for a few minutes before basting is a good idea to prevent salmonella.
      When meat's done slice it into thin strips, cutting across the grain. Serve with any or all of the second grouping as toppings/side dishes.
