Black Olive Perfection Salad

This is a very good recipe, no longer in print, from Knox's "On Camera Recipes" booklet. I'd misplaced that booklet a few years ago, wrote the company, and they were able to send me a copy of the recipe. My husband doesn't care for the regular perfection salad, but he could eat this one every day! It is especially refreshing in the summer when no one feels like cooking. I often double the recipe. It serves 4, at only 70 calories per serving!
Mix in small saucepan:
1 envelope Knox Gelatin
1/4 cup sugar
1/2 teaspoon salt
Add 1/2 cup water to saucepan; stir constantly over low heat until dissolved. Remove from heat.
Stir in:
3/4 cup water
1 tablespoon vinegar
1/4 cup lemon juice
Chill mixture until it is the consistency of unbeaten egg white.
Fold in:
1/2 cup finely shredded cabbage
1 cup finely chopped celery
1/2 cup chopped ripe olives
Pour into 2 cup mold. Chill until firm.
