Gastro Obscura sent out this post of 5 forgotten pies. I've made the Shaker Lemon pie, it is challenging to slice lemons paper thin, but if you don't get them paper thin they won't macerate right and they'll be chewy.

March 13, 2022 at 9:35 pm #33421I've made the mock apple pie before but can't remember much about it,but it did taste like apple pie.I think the recipe I used was whole Ritz crackers not crushed up.

I made the pie this morning. I would have done it yesterday but ran out of steam. The days when I would stay up till 2:00 am to bake a pie are over. Does a pie improved if baked the day before? I always try to make Thanksgiving Pies, and Picnic pies on the same day.It was my favorite apple pie with oil base crust and Gold Rush apples. The apples were a little soft and withered they have been in the refrigerator since Mid Summer. These are particularly good keepers and were actually tastier and sweeter then when just picked.

My thumb kind of got in the way when I was taking it out.
The recipe I used called for a can of evaporated milk, it wasn't until I had it mixed that I noticed they say a can is 5 ounces, the ones I have are 12 ounces. So I added an extra egg. Fortunately, it fit in the 9 1/2 inch pie pan. Not sure why the crust shrunk the way it did, it went all the way to the rim before baking.

Skeptic: Your pie sounds delicious. My apple pies seem to solidify better if they get an overnight rest. I try to bake them right after dinner, and then we start slicing at noon the next day. I, too, can no longer do the "stay up until 2 a.m." for baking or anything else without paying a steep price the next day.
I did not bake a pie because I will be baking my husband a small birthday cake later this week. However, a cherry pie may be in the future for next week.
March 14, 2022 at 7:42 pm #33439The crust on my chocolate chess pie is maybe a little underdone in the center. Filling is great, though, sort of a melding of brownies, pudding and mousse for taste and consistency.
If I do this again (and I'd say there's a good chance I will), I'd think about either par-baking the crust a little or giving it longer in the oven.
