      I saw this fascinating article on a pasta chef. Note that he does not like pasta machines.

        I note that he rests his pasta dough anywhere from 2 hours to overnight.

        I do agree with him in one respect about pasta machines, they can lead to overworking the dough. Pasta, like any wheat dough, develops gluten, and like a pie crust, overworking the dough leads to tough pasta.

                Yeah, it's one of the greatest April Fools Day pranks ever, and by the BBC no less! And they played it totally straight, no 'April Fool!' message at the end, the BBC was flooded with requests for how to get spaghetti plants.
