Blueberry Sauce
Great over cheesecake.
1/2 cup sugar
1 tbsp. cornstarch
3 cups fresh or unsweetened frozen blueberries, thawed
1 tsp lemon juice
Mix sugar and cornstarch in a 2 qt. microwave-safe bowl. Stir in 2 cups of the blueberries and the lemon juice. Cover with vented plastic wrap and microwave on high 5-6 minutes, stirring twice, until mixture comes to a boil. Stir in remaining berries and let cool. Makes 2 1/4 cups.
