      German Apple Pancake

      I use my 9" cast iron skillet.

      1 cup milk
      3 large eggs, at room temp.
      3/4 cup AP flour
      3 tbsps. sugar
      2 tbsps. butter
      2 medium cooking apples, such as Granny Smith, peeled, cored and cut into 1/4 inch slices
      1/4 tsp. cinnamon

      Confec. sugar for dusting

      Yields 6-8 servings

      Preheat oven 375 degrees

      In medium bowl, whisk together milk, eggs, flour and 2 tbsps. sugar.

      In large, heavy, ovenproof skillet over med-high heat, melt butter. Add apples, cinnamon, and remaining 1 tbsp. sugar. Reduce heat to med. and cook, stirring occasionally, for 2-3 minutes or until apples are softened slightly. Remove pan from heat. Pour batter over apples in pan. Place pan in oven and bake for 30-35 minutes or until pancake is lightly browned and puffy.

      Remove pan from oven and cut pancake into wedges. Transfer wedges to warmed serving plates, dust with confec. sugar.
