        Two of my remaining three butternut squashes showed clear signs of needing to be used. Yesterday, I picked up a package of marked for quick sale ground turkey, so that set me up for Sunday to make a large pot of Turkey and Butternut Squash Chili. I made it after lunch and will freeze most of it in single serving containers for lunches for me.

        Dinner tonight will be more of the turkey-vegetable loaf but with roasted sweet potato chunks.

          To go with the rest of the turkey-spinach loaf on Monday, I made a stir-fry of bulgur cooked in chicken broth and sauteed mushrooms and kale.

            I had rotisserie chicken on flour tortillas with fruit .

            Kimbob I put the photo of the cut cake on the wrong place grr, but you can see it's pretty and very moist. the picture does not do it justice it flipped on the plate .

              I picked a tomato and we had tomato and salami sandwiches, plus a salad.

                Wednesday's dinner was leftover sourdough pan pizza from last night.

                  For dinner, on Thursday, I made the pecan-Dijon-smoky paprika coated pork loin slices and roasted some potato chunks. Scott made a nice side salad for each of us using mixed greens from last Saturday's farmer's market. Annie had a bit of pork and potatoes as well.

                      We had salad again with more of the coated pork loin slices I made last night. Then we had freshlyt baked Hot Cross Buns for dessert.

                        Joan, that cake looks fine to me!

                        Earlier in the week I made pizza with eggplant, sausage, bell pepper and mushrooms. I thin sliced the eggplant and then brushed it with oil and baked it until tender. Then, when making the pizza, I put a layer of sauce on the crust, then the eggplant, then topped it with more sauce. Eggplant and sauce goes together very well.

                        I didn't take a pic after it was baked because I was hungry! I had enough for two days. But I had some sausage and another small eggplant on hand, so I made eggplant parm. Again, I first baked the thin slices until they were tender. I had it pasta and had enough for two days.

                          For breakfast today, I made chocolate waffles with oats. I used Arrowhead Mills pancake and waffle mix and added a half cup of oats and a quarter cup of cocoa powder. Delicious with a fair dose of pure maple syrup!

                          Have enough left for tomorrow.

                            We had the last of the pork loin slices for dinner on Saturday. I roasted potato chunks to go with them, and we also had microwaved frozen mixed vegetables.

                              Len, that pizza looks so good. I love eggplant, especially the white ones.
                              Anything chocolate has to be good!
