        We will have leftover soup and Pumpkin Soda Bread, while contemplating the 2 1/2 inches of snow we have gotten and speculating as to whether we will be getting more overnight.

            I made a pot of chicken noodle soup with leftover rotisserie chicken, I didn't have regular noodles so I used Fettuccine noodles and broke them down .It was good on this cold windy day we're having.Not complaining because I know all y'all up North of us are getting lots worse.

              I made a batch of meatballs that are going in the freezer for future meals.

              I used one pound each of ground pork and beef, a half package of Stovetop chicken stuffing, half cup of water, half cup of pasta sauce, one egg, a fair amount of dried parsley and dehydrated onion, ground fennel seed, a little oregano and a little black pepper.

              I made the balls 2 ounces each. It yielded 22 meatballs.

                Do you cook them before freezing them?

                  No. Since they're only 2 ounces each, cooking them from frozen doesn't take too long.

                    Meatballs look good Len.

                    I had leftover chicken noodle soup, this crazy weather has my head messed up so I'll eat on this till it's gone.It's cold and windy.

                      On Monday, I roasted and pureed two more small pumpkins. I will freeze it.

                      Dinner was more of the soup and Pumpkin Soda Bread. We cut into the second loaf tonight.

                      We had another half inch of snow overnight, but I am grateful we did not have as much as Mike did in Nebraska. Our roads were in good shape, a blessing, as I had a doctor's appointment today.

                        My sister in New Jersey got 22" My brother in Massachusetts along the coast got 27-30" on top of the 8-10" they already had. I'm thankful to be down here where it's cold but no snow.

                        I made sheet pan chicken fajitas tonight. Instead of tortillas, I cooked my last half cup of bulgur which was a nice base. I added Greek yogurt (full fat) and avocado. I have more for tomorrow at least.

                          I found some French Onion Soup in the freezer and we each had a bowl of it tonight, plus a salad.

                          Costco had some Emmenthaler cheese on sale a while back so we had the traditional cheese on our soup.

                              Soup and chocolate sounds like a fine dinner, Joan!

                              I made spaghetti and meatballs with broccoli. The meatballs were good, I'm happy with how they turned out.

                                Chicken and chocolate are known cures for whatever ails a person!

                                We had more of the soup and pumpkin soda bread for Tuesday night's dinner.

                                  Wednesday's dinner was Pork Loin Roast with Barley, Butternut Squash, and Kale. I like to make this recipe twice in the winter. The roast came from the farmers market several weeks ago, while the butternut squash came from the autumn market. We had sunny weather, which melted much of the snow, but the high was still in the mid-30s today. For dessert, we had thin slices of the Orange Barley Pound Cake I baked yesterday.
