        Our Sunday dinner was Turkey Zucchini Meat Loaf with Peach-Dijon Glaze and a Penzey's quinoa salad recipe that calls for corn and lima beans. I'm actually posting this note while the turkey loaf is in the oven, but it will be true in another half hour!

          I had a simple spinach, tomato, baked chicken salad with shaved Parmesan. Then I had room for the tiramisu I brought home from work yesterday.

            Dinner tonight was a salad plus cookies eaten for quality control purposes.

                Tonight I made fresh sautéed squash and onions and with that roast and gravy from the freezer on a roll.

                  Mike--Quality Control is Very Important when it comes to cookies! You can't be too careful.

                  I also see that CWC design had her priorities straight in saving room for tiramisu!

                  Our Monday night dinner was leftover black-eyed peas with brown rice and ham.

                    Thanks, BA! Tonight I made chicken salad from the rest of the tender I had baked and then a side salad of the spinach and tomatoes - no tiramisu tonight, just a little bit of dark chocolate

                      I went to eat with my sister in law and had a fish sandwich and fries.

                        We had a leftover dinner tonight. My elder bonus sun had the rest of the turkey loaf, and my husband and I had the leftover roasted chicken thighs. We all had more of the quinoa salad, with just enough left over for me to have for lunch tomorrow. Our temperatures were in the upper 80s today, with periodic strong wind, so it was a good day not to turn on the oven. Tomorrow should be much cooler.

                          I had hamburger patty with leftover squash and onions, fresh sauteed okra and banana pepper on the side. Cantaloupe for dessert later.

                            I'm back from Maine and cooking again! I had a sweet Italian sausage and a salad. My husband had his sausage with baked beans from a can. This morning I made a rhubarb "cake", my husband's choice. I do not like it, would much prefer a cobbler. Tomorrow I think I'll make a cobbler - and he can have some of it if he wants!!!

                              We have finished most of the leftovers, so for dinner on Wednesday, I made my healthier version of my Mom's Hamburger Stroganoff, which we had over brown and mixed wild rice. I was able to get some late asparagus at the farmers market yesterday, so for a side dish I roasted it with chunky mushroom slices and cherry tomatoes. My elder bonus son and I are both asparagus fans. As Scott is not, he had microwaved fresh broccoli as his vegetable. While the asparagus of June is not as wonderful as the asparagus of May, it is still very good.
