INSTRUCTIONS
Meringues With Crushed Raspberries
7 - 8 oz raspberries; caster (fine) sugar to taste; 7 - 8 oz double (heavy) cream; 16 small meringues (these come next!)
Crush half the raspberries with the back of a fork in a bowl. It tart, add a tsp of caster sugar, or to taste, and mix well. Fold in the rest of the berries gently, and put aside. Whip the cream lightly until it forms peaks. Coat the flat base of one meringue with the cream, cut the tip off a second meringue, so it stands flat, and add a spoonful of cream to the flat base. Add a teaspoon of the raspberries onto the cream, and carefully pop the first meringue on top. Repeat 8 times, or less if you keep tasting.
