Applesauce Cake

This is the cake made by my grandmother and the recipe was passed down to the rest of the generations after her. It is moist, dense and delicious! π
1 1/2 cups sugar
1/2 cup shortening
1 egg
1 tsp. cinnamon
1/2 tsp. cloves
pinch of salt
3 cups all-purpose flour
2 cups unsweetened apple sauce
2 tsp. baking soda
1 1/2 cups raisins
16 oz. jar of maraschino cherries, drained and chopped
2 cups walnuts
Mix together the apple sauce and baking soda. When they are mixed together, the mixture will "grow". It gets light and bubbly. Don't worry. This is supposed to happen to this mixture. Cream together the sugar and shortening. Add the egg, cinnamon, cloves, salt, and flour to this mixture. Add the apple sauce and baking soda mixture and mix well. Then add the raisins, cut up cherries and chopped nuts. Pour into a well greased Bundt pan and bake at 350 degrees F for approximately one hour.
