I'm marinating a small ham in ginger ale and will bake it later this afternoon.
I'm using up left over lima beans,rice and tomatoes to make lima bean soup,adding in celery,onions and a carrot.
For Sunday dinner, I made salmon and couscous with Penzey’s Greek seasoning. I also cut up a zucchini, sautéed it in grapeseed oil, and sprinkled it with coarsely grated Parmesan cheese.
Tonight we had fried cubed pork,macaroni & cheese and green beans.
We had creamed tuna on biscuits tonight. Warm comfort food.
I decided to make a pizza tonight, ground beef, onion with sauce from my homegrown tomatoes.
Tonight we had meatloaf,broccoli & cheese and a baked potato.
For Tuesday night dinner, I roasted two little butternut squashes—a new variety that produces small, sweet ones—after tossing them in a bit of olive oil and maple syrup. While the squash roasted in my countertop oven, I cooked one cup of farro in two cups chicken/turkey broth. I sautéed some finely chopped onion in a bit of olive oil, then added the cooked farro, leftover browned ground turkey (from last week’s pizza), then stirred in the roasted squash. This combination is very tasty. We had microwaved broccoli as a side dish.
Tonight was leftover spaghetti and meat sauce and garlic bread.
I'm not sure what we're doing for dinner yet, my wife had a root canal yesterday, so she can't chew on one side yet. She may just have soup.
Dinner tonight was leftover pot roast.
I roasted a pork chop and had it with spaetzles .
Tonight we had fried chicken breast,thickened potatoes,left over broccoli and cheese and creamed corn.
I'm making chili tonight. I've got two pots on, one is about half black beans the other one has just kidney and pinto beans in it. If we like the black beans one, I might combine the two for leftovers and freezing.
