Savory Brown Rice and Raisins
Can be served as a side dish with roasted chicken or turkey or add diced chicken or turkey for a one-dish meal.
1 cup brown rice
1 T. olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup raisins
1/4 cup golden raisins
1/4 cup sliced green onion
Cook rice according to pkg. instructions, omitting oil and salt. Heat olive oil in a med. saucepan or skillet over med-high heat. Add celery and onion; cook, stirring occasionally until onion is golden brown, about 5 min.
Stir in raisins and green onion. Reduce heat to low, cover and cook 5 min. or until raisins are plump.
Stir in cooked rice. Season with salt to taste. Makes 3 cups
