      I want to bake the KAF recipe for Irish Cream Scones:

      Some of you will recall that these used to be called Cappuccino Scones--until KAF stopped carrying the cappuccino chips. I did some looking on line, and other places list cappuccino chips as "out of stock," so that appears to be a trend. I miss those cappuccino chips, both in this recipe and in the cappuccino biscotti recipe KAF has (but has likely renamed). So, the question is: What substitution would work best?

      I'm not so sure about the butterscotch option that KAF is now using. When I last baked this recipe--and used up my remaining cappuccino chips (sob, sob), I added 1/2 tsp. espresso powder (maybe was in the original recipe). I'm considering upping that to 1 tsp. I'll use heavy cream rather than Bailey's, with 1/4-1/2 tsp of the LorAnn Irish cream flavoring. For the chips, I'm thinking of using white chocolate.

      I also have Coffee Extract from Nielsen-Massey, so maybe 1/4 tsp Irish Cream and 1/4 tsp Coffee extract instead? Cappuccino's flavor comes from coffee and milk.

      If anyone has other suggestions, please comment. I hope to bake these for tomorrow, and I will report back on the results.

        BakerAunt, I searched every vendor I could think of for cappuccino chips, as you found, they're all out of stock. We probably looked in the same places. So I Googled various questions about whether there's a cappuccino chip shortage and didn't come up with an answer that there is. If you're still curious and have time after you bake, you may want to call one of the vendors' customer service and ask them whether there's a shortage, or if these are no longer being manufactured. KAF should be able to tell you this. If not, Amazon.

          I can't find cinnamon chips any place local now, although Hershey's cinnamon chips are listed as stocked in several of the grocery stores (and the clerks/stockers have no idea why there are none on the shelves or in the warehouse). But I did find a recipe for how to make your own cinnamon chips. I wonder if that could be adapted to make cappuccino? I'll see if I can find the recipe. Or, you could google "DIY cinnamon chips". Also, I was in the KAF store this afternoon, and looked again for their cinnamon chips -- not to be found. I didn't ask, although I was the only person in the store, aside from the three clerks. There was a nor'easter blowing around outside - the best time to shop!

            Chocomouse: KAF no longer carries the cinnamon chips. They have this product--cinnamon pieces--instead:

            Reviews on the new product seem mixed. KAF did not explain why it no longer carries the cinnamon chips, and apparently has no intention of saying why. I have a stock of them in my refrigerator, so I can continue baking with those.

            I remember Baker Irene, on the Baking Circle, discussing in a thread how to make one's own flavored chips. I'm not sure if I saved it. I certainly meant to do so.

              I found my recipe, but also googled cinnamon chips. Here's a website I think I got my recipe from:

                BakerAunt, I haven't yet tried the cinnamon bits that KAF carries, and they had none in the store today. TI did see an apple pie flavor bit. If they are anything like their other "jammy" bits, forget it! I've tried several including the blueberry and the lemon -- no flavor, rubbery. I think the Prepared Pantry does still carry them. I too have a couple packages saved in the fridge. I hate having to be so organized that I plan and order ahead! Maple Cinnamon scones are a standard around here -- something quick when you need a baked good to share.

                  Over the years King Arthur has discontinued a lot of items. Some probably got dropped because they didn't sell enough, a few got dropped because the supplier stopped making them (the salt-rising-bread starter comes to mind here), and quite a few got dropped because KAF decided not to carry certain types of ingredients. That's why they discontinued the consumer version of their bleached cake flour, though I think they still sell it in 50 pound bags to bakeries.

                  That's also why the lemon chips went away, I think they could not find a supplier who didn't use trans fats in them. That might possibly be an issue with the cappuccino chips as well.

                  I found nearly a dozen sites offering cappuccino chips, including several offering the Guittard chips. I couldn't tell if they were all out of stock, some of them I probably would have had to try to order them to find that out. (I HATE sites that do that!)

                  As far as I can tell, Guittard still makes them, but they may only make them one or twice a year. (Kraft tried to discontinue the Roka Blue jar cheese, but so many people wrote Kraft about it that they now make it just ahead of Christmas every year.)

                    Here's what I did:

                    1/2 Cup heavy cream
                    1/4 tsp. Irish cream flavor
                    1/4 tsp. coffee extract
                    1 tsp espresso powder
                    1/2 Cup Barry Callebaut white chocolate chunks

                    I sprinkled them with "cappuccino sugar," from Pepper Creek Farms, which I had bought a while back at T.J. Maxx. I think that KAF briefly carried it. I'll report on taste tomorrow.

                      The taste is very good, The white chocolate chips and additional flavoring do help, but for this recipe to be all that it can be, it needs those cappuccino chips with their burst of flavor.

                      I will explore the threads from chocomouse on making one's own, and also see if I can locate Baker Irene's thread. I have hopes that somewhere out there someone will be able to figure out how to make these without the transfats.

                      When I google cappuccino chips, they keep coming up as carried by KAF, although they have been discontinued. I think that may be the case at other sites as well.

                          Many years ago, when KAF discontinued mini lemon chips, I found them in 50# bags at http://www.cerealingredients.com. One of the BCers ordered one 50# and divided them up between several members but that was the last anyone saw of them anywhere. Nuts.com did sell regular sized lemon chips and the grocery stores did carry the regular lemon chips some of the time. But they were not at all like the mini lemon chips from KAF. Last time I looked at cerealingredients.com, they did sell the hard as rocks cinnamon bits that KAF did sell but they were tooth breakers to say the least. Seems like they also had 50# bags of the stuff like Bakers Cinnamon Filling in various flavors.

                            Here's the thread from the Baking Circle on making your own chips; I did indeed post it here under threads:

                            Baker Irene suggested using white chocolate and flavoring it. Naturally, you would not get chips, but you would get pieces that you could chop into the desired size.

                            I'll keep this in mind, but I'd really like to buy my own,
