Blueberry Coffeecake
I copied this recipe from Martha Stewart's program on 7/2/01.
Cream together:
1 cup white sugar
1 1/4 sticks room temp butter
Add:
3 large eggs
1 1/4 cups sour cream
1 tsp. vanilla
Gradually add in these already sifted together ingredients:
2 1/2 cups flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
Fold in:
1 cup blueberries
Spread into 9" square baking pan, non-stick or prepared.
Topping: Prepare BEFORE making batter above.
1/2 cup light brown sugar
1 1/2 sticks cold butter
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 cups flour
Mix well til crumbly. Keep COLD til batter is prepared.
Add crumbly mixture to 1 cup blueberries, toss well. Spread onto batter in pan.
Bake at 350F degrees, 50-60 min. Cool, dust w/powdered sugar
