I volunteered to make corn bread for the chili contest in our over 55 community. I found a lazy person's recipe on "spicysouthernkitchen.com". It called for 2 boxes of Jiffy Muffin Mix and used 1T of sugar. (I like sweet cornbread). Any way they have a variety of Jiffy Mixes now and I used the honey one. The cornbread had just the right amount of sweetness and some of the people asked for the recipe.
I finally made Salmon. Baked it on sheet pan with roasted potatoes and asparagus. The recipe was from Creme De La Crumb. It was healthy and delicious.!
Please do experiment.
We had sticky honey lime chicken which I baked in the oven with acorn squash and baked potatoes. Everything baked at the same temperature which made things easy!
My neighbor brought over her chicken noodle soup. Will be in the upper 70's today vs 50's 2 days ago. Will still be good I'm sure.
Just got back from a bus trip to Maine. Had the worst Reuben sandwich I've ever had. The bread wasn't toasted and it dissolved in the sauerkraut. The corned beef was stiffer than cardboard. Oh well. Last night we had chicken thighs marinated in Japanese bbq sauce, with roasted asparagus and baked potato.

I made Blueberry Pie Bars. I had some blueberries that I had frozen a while ago and they worked fine. The dessert was a hit at our wine event.
My neighbor brought over some figs from her fig tree. They needed to be used pronto. I found a recipe for pork tenderloin with figs and onions. It was a "Simply" online recipe. Dinner was impressive and delicious.
Looks like an interesting recipe. I enjoyed the article too. Thanks.

It was pretty good. Tonight will be bacon and cheese omelets with hash browns and english muffins with jam.
September 21, 2023 at 8:45 am in reply to: What are you Cooking the Week of September 17, 2023? #40419We had lamb loin chops so I got to use up some of my thyme and rosemary as they marinated in garlic, salt, spices and olive oil. I grill them on my grill pan for 3 min per side and then bake them in a 400* oven for 8-10 minutes. I can put my russet potatoes in the oven earlier and all is done a the same time. I paid only $5.99lb at Costco and they were nice and thick.

More like summer than fall. Technically it was summer. My bridesmaids had velvet gowns and I don't think the restaurant where we had the reception had air conditioning. Oh well. I guess September marriages last the longest!
