      No party here, either. Made chicken bagel pizzas for lunch today. Tonight's dinner will be pan fried cod, sugar snap peas, and brown rice. Probably will be cooking more this week than baking.

        I finally used up all the sourdough discard I had built up the past few days with today's loaf of KAF basic sourdough bread. Even with my scoring of the bread - even the recipe didn't say to score it - the loaf doubled in size once it hit the oven. I had an overabundance of apples in Nov/Dec last year so I had sliced, seasoned, and froze the fillings to make apple pie. So I thought I'd try that this weekend. So have an apple crumble pie in the oven right now. Will have to see how it tastes later tonight.

          Wonky, I love the KAF Soft Cinnamon rolls. I've made the recipe several times. The ones I've made for work I've used heavy cream, butter, and topped it with a cream cheese frosting. I'm also in the same boat as you in terms of what our families have in the baking supplies. I think my oldest niece is starting to get into baking (she made the cookies for her father's cookie exchange at work). I hope that there will be more among the other nieces and nephews.

          Mike, when you put the muffins back in the second time, is the temp the same or is it lower? I've done this method with my bread baking - sometimes I take the loaves out of the pans and then pop them back into the oven for another 5 min. It somehow keeps the sides from caving in.

          Bakeraunt, I think I've been baking enough for the both of us. My starter has been working like it's on steroids. I've actually been using my discards to make KAF sourdough whole wheat bread, KAF sourdough cinnamon crumb cake x 3, KAF sourdough date nut cranberry bread x 2, KAF sourdough maple quinoa bread x 2, KAF sourdough honey quinoa bread, and KAF basic sourdough bread.

          The two maple loaves, I gave away as gifts to a coworkers who are vegan and they never get to eat the other stuff I bring in. My freezers are packed so I don't know if I will be baking next week. I also found out another coworker has just started to learn how to bake and he's trying his hand at sourdough. I gave him some of my starter and he was amazed at how strong my discard was.

          As to the previous thread where we were talking about Nuts.com - got my order today. I had ordered several cans of Love N Bake schmear and paste. Each can came wrapped in bubble wrap. So no dents in them. But I did get two cans of the schmear that had best by dates of Oct, 2017. The nuts were very tasty.

            Not much cooking this week. Been eating a lot of take out or out of the freezer. I made soy sauce chicken wings on Tuesday (boiled the wings in water w/garlic and pepper. Then I take the wings out and put them in another pot of boiling seasoned sauce for about 5 min. Thursday, I took out the spaghetti sauce w/meat and had that for dinner. Tonight, I roasted a salmon fillet. Will probably use the leftovers for salads.

              A belated Happy Birthday to Bakeraunt! Sounds like you had a great day. I haven't tried any Key Lime Pie (I think it's because I know there's dairy in it) I recently made lemon bars and then tried to make lime bars by substitution.

                Mainly eating out of freezer and take out this week. Made Beef Shepard's Pie and roasted cauliflower with curry powder instead of paprika. Hopefully will have time to cook more this upcoming week.

                  Not much baking for home this week. Made a pan of soft cinnamon rolls for work meeting on Tuesday and then Sourdough Date Nut Cranberry bread for work today. It's a nice one to use up the unfed sourdough discard when I'm feeding it.

                    I know, I was surprised to see the unsalted roasted nuts! It's very hard to find unsalted nuts around here. I'm tempted just to put an order in and see what turns up. It's like a new store - very dangerous for me cuz I want to buy so much!

                      Chocomouse, I checked and KAF doesn't have the recipe for the almond schmear. It annoys me when they use ingredients that they no longer carry. My family and friends love their Almond Cloud Cookies which uses the Love N Bake Almond Paste.

                      RiversideLen, Nuts.com carries a lot of the Love N Bake products. I also love the Love N Bake Almond Paste for cookies. And I want to try their newest recipe the Almond Galette which uses almond paste.

                        Plan to make a double batch of KAF's Soft Cinnamon rolls for a work meeting on Tuesday. Probably will be baking again towards the end of the week.

                        On a different topic, just found out that KAF has stopped carrying my favorite Love N Bake Almond Schmear (love to use it in place of cinnamon filling for the cinnamon rolls) and have found that Nuts.com carries that product. Has anyone purchased anything from Nuts.com?

                          I plan to make beef shepard's pie with the leftover pot roast I had made last night. Probably will be eating out of the freezer again this week, too. Need to make room!

                            This week I wanted to try some new things. Made our family's favorite banana bread with white whole wheat flour. Decided to revive my sourdough starter that been dormant in my frig for the last 10 months. It came to life after two days of twice feeding. So with the discard, I made KAF's sourdough date nut cranberry bread, basic sourdough bread, sourdough quinoa honey bread. That basic sourdough bread practically exploded in my oven - the loaf rose twice the height of the 9x5 pan. Wonder if KAF had overestimated the dough, the recipe said it makes one loaf and I could easily make 2 with what I had. I also wanted to try my hand on compound butters but I used margarine instead as I can't eat butter. Orange-cranberry margarine and honey-cinnamon margarine was what I ended up making. Both are pretty good, I did end up freezing a lot of it and have only one little container in the frig.

                              This week did a little bit more cooking. Made ham & bacon fried rice, pan fried tri tip steak strips (really burnt pan and needs to cook longer than 6 min) - tried it a second time in a George Foreman grill and better results with that. Mid-week we had sautéed zucchini with chicken and mabo tofu. Last night made beef pot roast served over rice.

                                This week was a light baking week. Made pumpkin dog treats on earlier in the week. Today I tried to make Dutch Crunch rolls, used Antilope's Vienna bread as the base. And also made KAF Morning Glory muffins for work tomorrow morning.

                                  Been eating leftovers or take out for most of the week. Did saute some sugar snap peas with lotus root. Bought some tri-tip steaks and will try to cook that later this weekend.
