We had a hamburger on light bread with home cut fries.

November 9, 2020 at 12:33 pm #27299I cooked my large pink banana squash/pumpkin. It made 6 pints of pumpkin puree and one pot of curried pumpkin soup. I like this soup recipe a lot and make it at least once a year during pumpkin season. It mixes cooked chickpeas, pumpkin chunks, onions and curry into a very hearty flavorful soup.

November 9, 2020 at 6:38 pm #27310For dinner on Monday, I made salmon and couscous w/ Penzey’s Mural of Flavor Seasoning. We also had microwaved frozen peas.
Temperatures here were in the mid-70s today. When I took my walk before noon, I did not need a jacket.
November 9, 2020 at 6:44 pm #27311The temperature here dropped about 30 degrees between 10 AM and 5PM, it's now in the mid 30's and raining, with a winter storm watch.
Today was leftovers (meatloaf and baked ham), and tomorrow probably will be, too.
November 9, 2020 at 8:17 pm #27313Like with BA, nice weather in Chicagoland the past several days but that's going to change soon.
Tonight's dinner was all made on a 1/4 sheet pan lined with foil, an apple stuffed acorn squash, baked potato and a breaded chicken patty (from frozen), and I was able to time it all right. Started the acorn squash in a 400 degree oven, after 15 minutes I added the potato and after another 15 minutes the chicken patty. 30 minutes later it was all done.
November 9, 2020 at 8:50 pm #27316I made Chicken fingers from Half Baked Harvest. I like that she uses crushed cornflakes- the seasoning was fajita seasoning and black pepper. Crushed Cheez-its or goldfish were optional. I didn’t have either so I added KAF cheese powder. The chicken was dipped in a buffalo sauce and yogurt (didn’t have buttermilk) mixture first, then crumbs, then baked. They were served with ranch a a pepper/fajita/buffalo sauce/butter sauce for dipping. We also had brown rice and frozen peas.
I was pleased - they weren’t too spicy but had a nice warmth.
November 10, 2020 at 6:08 pm #27321On Tuesday, I made Broccoli, Tomato, and Quinoa Salad. We had it with roasted chicken thighs--rubbed with olive oil and sprinkled with Penzey's Poultry Seasoning and Sweet Curry--for dinner.

November 11, 2020 at 8:40 pm #27332I had a non conventional pizza. Ground chicken seasoned with taco seasoning, diced roasted potato, refried beans and topped with a Mexican blend cheese. I made it in a cast iron pan because I was concerned that it would be too juicy to bake on a stone. It was good.
November 12, 2020 at 5:08 pm #27335Salmon baked in foil with scallions, tomatoes, dill, butter on top. Plus, sprinkled on some penzeys justice spice. Homemade applesauce, salad, garlic bread. The hub had some fries, too. He also had a glob of ricotta instead of applesauce. 🙄
