Thanks, Len and Joan. There is nothing like an omelet with lots of sauteed vegetables.
Although it is not pea soup weather, my husband felt that he could manage eating pea soup for dinner on Wednesday, even without my pureeing the carrots and celery. I made sure to cut the vegetables small and to sauté them for ten minutes before adding the peas and water. I also cut the ham pieces, which I thawed from the freezer, into small chunks. He was able to eat it without problems, so that is a good sign. I also made mini-cornmeal muffins to accompany the soup.
We had hot dogs and I had a salad. I think Diane's going to finish off the keto cheesecake tonight.
Yesterday I got a rotisserie chicken from Whole Foods and made tacos. Had it with a boiled potato and broccoli.
I think tonight's dinner will be pasta and chicken.
I think we're going to do mozzarella crust pizzas tonight.
Thursday's dinner was more pea soup and mini cornbread muffins.
Dinner tonight was assorted salads: leftover potato salad; spinach with mushrooms, bacon, red onion; bowties with spinach, black olives, goat cheese; and deviled eggs.
Chico mouse your salad sounds good. I bought a rotisserie chicken also, I had chicken, salad and corn on the cob.
We had sirloin steak, sauteed mushrooms, steamed broccoli and a small salad tonight.
We were out and about this afternoon, so we were glad to come home to a Friday dinner of more peas soup and mini cornbread muffins.

I had a hamburg patty and a tomato.
I baked Asparagus, Scallion, and Goat Cheese Quiche on Saturday. I had a slice for dinner, while Scott, who does not care for asparagus, finished the pea soup and cornbread mini muffins. For dessert, we had fresh strawberries from the farmers market.
I picked up a rotisserie chicken and we had that plus some strawberries for supper.
