Tonight we had chicken and potatoes roasted on the grill, with a green salad.

July 22, 2024 at 2:48 pm #43378I had breakfast for supper. Bacon, eggs with spinach and cheese, and blueberry English muffin. The bacon I bought at Aldi's last week. It was excellent 699 for a pound and a half. It was thick cut and maple.

July 24, 2024 at 6:35 pm #43395I started my cooking day on Wednesday by making yogurt.
I then used some frozen lima beans I had cooked about six weeks ago to make a bulgur stew with onion, orange bell pepper, garlic, tomatoes with hatch chilis, Spanish paprika, a little cumin, and a bit of cayenne. It is a rift off of a recipe that uses garbanzo beans. The lima beans make it somewhat bland, but I needed to use them up. I have enough for several more lunches.
Dinner on Wednesday was stir-fry with leftover pork and soba noodles. I also used green onion, red bell pepper, celery, the five snow peas we got from our garden, mushrooms, and broccoli. We have enough for another meal. For dessert, I had the rest of the cantaloupe and a small York peppermint patty. My husband had a zucchini muffin and a molasses cookie.
July 24, 2024 at 7:31 pm #43401We had shrimp, squash, fennel-apple slaw, and cucumbers for dinner. We are receiving a box of fresh produce every week, part of a program for the elderly in our area. Our garden is not producing well yet, due to extreme weather conditions of dry, then heat, then downpours/flooding, etc so we are excited to get fresh food from the organization that we often donate our excess produce to. This week among the goodies in the box was a zucchini-type squash, a costata romanesque, which is new to me. I cooked it like regular summer squash: sliced, drizzled with olive oil, and roasted - delicious. Also in the box was a fennel bulb and some apples, with a recipe included, so I made that: a fennel-apple slaw, with oil and vinegar. This is not exactly like that TV show where contestants are given a surprise box of weird foods to cook, but I'm having fun with it.
