      I'm going to to some smaller 6" tart pan sized pies for Thanksgiving, to keep the carbs down even with a more carb-friendly recipe.

        I made a batch of lower carb apple pie filling (using allulose and bamboo fiber instead of sugar and cornstarch), some will go into my Thanksgiving apple pie/tart, the rest will probably go into the freezer.

          I made Maple Granola on Sunday. I also baked Lime Pecan Biscotti, using limes from my lime tree.

              Maryann (dachshundlady) asked about Big Lake Judy's Molasses cookies today and I told her I thought the recipe was here. I found it and sent it to her. She asked me to thank you Mike, she's not much into conversations these days. Her family is keeping her very busy.

                Too bad, she always had interesting things to talk about, but thanks for sending her that recipe.

                The group here is shrinking slowly, not many new active posters. The good news, though, is Google says traffic from non-members browsing is trending up. This time of year the two Blog posts I wrote about pie dough thickness get a lot of hits, but they get hits all year long.

                  I did Pepperoni pizza Sunday, its now in slices in the refrigerator for occasional snacks. It started out as side to side pepperoni but these shrank during the cooking.
                  My father's plans for Thanksgiving involves going to a restaurant so will be doing very little Thanksgiving baking. I'd like to do some steam bao.

                    Cass told me a few years ago that he was disappointed that so many people from the Baking Circle, such as Frick and Dachsundlady, Mumpy, and RobinWaban did not come to Nebraska Kitchen. Wonky and LuvyPom came but disappeared. There was also a guy from New York who was an excellent baker and a former competitive cyclist. I, too, miss them and often wonder how they are doing.

                      I made two cakes today for my friends. One was the coconut cake with cream of coconut poured over with a Cool Whip icing with coconut on top.One friend wanted a pineapple cake so I found a recipe I tried looks good and easy . Both were made from box cake mix. The name of pineapple cake is Pineapple Sunshine Cake it's gonna be a keeper for me. I haven't tried it yet but I know I'll like it.

                        I made lower-carb pie dough for 3 six-inch tarts and a top for one of them. I'm planning to make an apple pie/tart and one or two sweet potato pies, depending on how much filling the first one will hold. (I might freeze one of them before baking it, that's supposed to work with this recipe.)

                          I'm taking a break right now from making cheesecakes for tomorrow's dinner. One is a chocolate graham cracker base, with a thin layer of raspberry jam, and a filling swirled with chocolate and jam. The other is a regular graham cracker base and a filling with chopped candied orange peel (that I made from scratch) and chopped fresh cranberries. I use my regular cheesecake filling recipe, then divide it in half, for each kind of filling, and use two 7" springform pans.

                            Cheesecakes sound wonderful Chocomouse.

                            Today I baked a Lemon Supreme Pound Cake for my neighbor,banana bread because they were ripe and brownies for my cousin. I made more of the pan grease it worked fine for my pound cake but the banana bread stuck on the bottom dang it but it'll be OK.

                              Joan--from my own experience, I think that the pan grease works best with cake batter. I've had some similar issues when I tried to use it with a thicker batter, such as for muffins or quick breads. Have other people noticed it?

                              I baked Soft Oatmeal Raisin Cookies on Wednesday.

                              I also baked Whole Wheat Sourdough Cheese Crackers from dough that I made last week.

                              Finally, because I have been craving them, I baked my oil-based cranberry scones and added some lemon zest. I will freeze some of these and set the others aside for breakfast tomorrow and Friday.

                                Thanks BakerAunt I'll definitely use my parchment paper for that next time or just grease and flour them.

                                  Last night I baked a 6" sweet potato pie, 2 4" sweet potato pies and a 6" 'deep dish' apple pie.
