        We have been out of cookies for a couple of days, and I consider them a necessity for teatime, so on Sunday, I baked my butterless adaptation of a King Arthur recipe, "Soft Ginger and Molasses Cookies." I have baked it once before, and I think that was when I bought the ginger syrup the recipe specifies. As the opened bottle is sitting in my pantry, I wanted to use some more of it. I made a full recipe and ended up with 30 cookies. I hope that will get us through at least a week, but I am better at pacing myself with cookies than my husband is.

          I made a batch of (5) buns this afternoon. I held out enough dough to make a pizza. I have an open package of cheese that I want to use up.

            I baked Whole Wheat Sourdough Cheese Crackers on Monday from dough I made last week. My husband is happy to have his crackers again.

              I baked an 8 x 8-inch blueberry streusel coffee cake on Tuesday. I used the countertop oven, and since I was using glass and convection, lowered the temperature from 375 to 350 F. Although it baked through, I could see on the bottom that it was browner where the dish was over the elements. I may not do a cake in a glass dish in that oven again.

                I made 2 loaves of KAF's recipe for oatmeal whole wheat bread, subbing buttermilk for the water. As usual, they rose about 4 inches above the pans. I have to bake on the very lowest rack of my countertop oven or the tops will burn onto the elements.

                  I did a cheese and tomato deep dish pizza on Sunday. It used up the last of some beautifully red tomatos from the farmers' market. I used used Beef Pepperoni from a Halal store. I wanted to see what these were like and they were very tasty, possibly a bit less spicy than the ordinary variety. However it was sold in a 2lb bag so now I have enough pepperoni in the freezer for 20 pizzas. The pizza came out nicely and most of it was refrigerated and being eaten for lunch and snacks. 15 seconds in the microwave is warming it up without toughening the bread part.

                    Today I made a new recipe for coffee cake from Mennonite Girls Can Cook. It has pecan and brown sugar streusel in the middle and on top.I added drizzle of icing.Can't wait to try it.

                      Your coffee cake is beautiful, Joan, and I'm sure it is delicious!

                      I used my adaptation of the King Arthur recipe for Rye Blueberry Bars to make Rye Blackberry Chia Jam bars. They came out very well.

                          Update on the coffee cake. It was excellent texture was soft. The best I've ever had. Here's what it looked like inside.Thank you all for the comments.
