I made some Taiwanese Breakfast Bao from the King Arthur recipe and it turned out better than it has for quite a while. I made several changes in the recipe and I don't know which is responsible for the success. It had more salt, one teaspoon instead of 1/4 teaspoon, more baking poswer one teaspoon instead or 1/4, only 1/4 cup milk since I ran out and used water instead. The dough was thicker and firmer than normal and when cooked kept its form better. I probably had less liquid total than in other recipes. I've changed too many variables at once to figure out which was responsible for the improvement.
Diane made oatmeal-date-raisin cookies today. I think she and our son are planning to make oatmeal chocolate chip cookies over the weekend. (Or they may be hoping I make them.)
I baked Eggnog Muffins on Friday evening to have for breakfast tomorrow and for a few days afterwards. The recipe is my adaptation of an old King Arthur recipe for Holiday Eggnog Muffins. My version replaces butter with avocado oil, reduces the sugar and salt, and replaces the AP flour with white whole wheat flour. I also use a reduced fat eggnog. I made them tonight because the spices will have a chance to develop if they rest overnight. I adapted this recipe last year and discovered that the warm ones did not have the great flavor that the muffins had on subsequent days.
