      Tomato relish

      This was originally from Doris Blackwell. I found it in my MIL's recipe boxes. It makes a sweet/sour relish that is great with pork or on focaccia.

      • Grind and drain:
      • 3 1/2 cup onion
      • 3 1/2 cup green and ripe tomatoes
      • 3 cups green bell pepper
      • 3 cups red bell pepper
      • 5 cups sliced celery

      Heat tomatoes to boiling. Add peppers, onions, celery and stir. Remove from heat and let stand 10 minutes. Drain.

      •Combine and bring to a boil:
      • 1 1/2 cup brown sugar
      • 1 1/2 cup white sugar
      • 1/4 cup mustard seed
      • 2 tablespoons salt
      • 1/2 teaspoon turmeric
      • 2 cups vinegar

      Pour hot syrup over hot vegetables. Bring to a simmer and cook 15 minutes. Can in sterilized jars. Process in boiling water bath 15 minutes.

      Makes 12 cups.
