      INSTRUCTIONS
      This is said to hail from Turkey, though I can't vouch for it. Battered sweet dishes are very popular all round the Mediterranean though so it is regionally authentic.

      Strawberry Fritters

      Preparation: 10 minutes + 2 hours waiting time
      Cooking time: A few minutes
      Cost: Economical
      Difficulty: Very easy

      Cooking Tip
      This recipe can be made with any kind of fruit you choose.

      Ingredients

      125 g flour
      2 eggs
      Fresh strawberries
      100 ml milk
      100 ml beer
      1 tbsp. olive oil
      1 heaping tbsp. sugar
      A pinch of salt
      Powdered sugar
      Oil for frying

      Preparation

      1. In a bowl, combine the flour, salt and egg yolks; slowly pour in the milk and the beer; add the olive oil; combine gently without beating; let rest at room temperature for two hours;
      2. just before frying, beat the egg whites to stiff peaks; fold into the mixture;
      3. heat the oil for frying; hold each strawberry by the stem and dip it into the batter;
      4. lower the bottom of each strawberry into the oil and hold it there for a few seconds; release the strawberry into the oil; cook until golden; drain;
      5. place on paper towels; sprinkle with powdered sugar and serve.
