I tried to buy special dry milk from King Arthur in December when they were having sales, but they were out of it. I tried again yesterday, and they are still out of it. I wonder if they are having issues with sourcing it.

Try The Prepared Pantry website, but their delivery charges are high.

Is there an advantage to using "special" dry milk over regular grocery store dry milk? I use the regular, and it seems to work just fine. I know what the advertising says, but ??

When I ran out of the baker's dry milk last year, I just bought some from Bob's Red Mill. Seems to work just fine.

I think what you don't want is the big box of Carnation, because it's very granular and IMHO smells awful. (And I don't even want to think about the taste!)

I do have plenty of the Bob's Red Mill milk powder, which I buy from Vitacost, so when I run out of the special dry milk, I will switch to it. I've mostly used the BRM for non-yeast recipes.
