      Sand Tarts

      This recipe is from my maternal grandmother. It's probably about 75 years old and is a treasured cookie in my family.

      1 cup butter, softened
      1/2 cup confectioners' sugar
      1 teaspoon vanilla extract
      2 cups all-purpose flour
      1/2 teaspoon salt
      1 cup chopped pecans

      Cream butter until light. Beat in sugar and vanilla. Add flour and mix until just blended and stir in nuts. Wrap dough in plastic wrap and refrigerate until cold to make it easier to shape.

      Pinch off small pieces and roll with your hands into crescents about 1 1/2" long. Place on parchment covered cookie sheet and bake at 300 degrees for about 20 minutes. They will be firm to the touch and just barely beginning to color when done.

      Remove from the baking sheet after a couple of minutes and roll in additional confectioners' sugar to coat. Place on a wire rack to cool.

      Store in a cool place in a closed jar or can. These cookies can be stored for at least a week at cool room temperature with no loss in quality or freeze if desired. Roll in more sugar before serving if desired. Makes about 30 cookies.
