Was in Grand Rapids MI last week, and there was a Wolfgang Puck Kitchen in the hotel.
They had a Margherita pizza on the menu but there was garlic in the sauce.
But the staff was able to make one using some marinated tomatoes instead and it was great!
The tomatoes were concassed (skinned and de-seeded) and the marinade was sugar, olive oil and chopped basil. The kitchen staff thought it looked and smelled great, they weren't wrong! They were considering putting it on the menu.
Will have to try this at home with some fresh tomatoes--soon!
