      Oriental Almond Cookies

      INSTRUCTIONS
      Desserts, as we know them in our Western curlture, aren't traditional with Oriental menus. Sweet desserts are usually eaten with tea as a snack. These crunchy cookies are a nice treat anytime.

      2 3/4 cups AP flour
      1 cup sugar
      1/2 tsp baking soda
      1/2 tsp salt
      1 cup lard
      1 slightly beaten egg
      2 Tbsp milk
      1 tsp almond extract
      24 blanched almonds, halved

      In a mixing bowl stir together flour, sugar, soda and salt. Cut in lard till mixture resembles cornmeal. Combine egg, milk and almond extract; add to flour mixture. Mix well. Shape dough into 1-inch balls and place 2 inches apart on ungreased cookie sheet. Place an almond half atop each cookie and press to flatten slightly. Bake in a 325º oven for 16 to 18 minutes or till done. Cool on rack. Makes 4 dozen cookies.
