      MY BEST OATMEAL COOKIES
      Recipe posted in a thread by Cindy Leigh on December 12, 2012

      1 cup sugar
      1 cup brown sugar
      1 cup butter or butter flavor crisco
      3 eggs
      1 1/2 tsp vanilla
      1 cup chopped pecans
      1 tsp butter flavor extract
      3 cups oatmeal, milled
      1 1/2 cups flour
      1 tsp baking soda
      1/2 tsp salt
      1 bag cinnamon chips
      1/2 cup Skor or Heath bar baking pieces

      Mill the dry oatmeal in a food process or until the flakes are 1/2 original size. Add dry ingredients except sugars. Set aside.

      Cream butter, sugars, eggs, and extracts. Combine flour mixture with butter mixture. Add nuts, chips, and Skor pieces.

      Form into 1-inch balls and flatten slightly.

      Bake at 350 for ~14 minutes. Cool slightly. Carefully remove to a wire rack.

      Can roll dough into logs and freeze for later baking.

      This is a crispy, not chewy, cookie.
      If dough is too dry, add 1-2 tbsp water.
