      Hot Cross Buns

      INSTRUCTIONS
      Scald 1 cup milk. Add 1/4 cup sugar, 1/4 tsp. cinnamon, 1/8 tsp. nutmeg, 1/4 cup currants, 2 tbsp. butter, 3/4 tsp. salt and 2 tbsp. grated lemon peel. Allow to cool.

      Sprinkle 1 packet active dry yeast over 2 tbsp. 105-115 degree water. When milk has cooled to lukewarm, add it to the yeast, then add one beaten egg.

      Sift before measuring: 2 2/3 cups flour. Stir and knead flour into wet ingredients. After dough is formed, place in greased bowl. Brush top with melted butter. Allow to rise until doubled in bulk.

      After first rise, shape into 18 balls and place on greased baking sheet. Cover and let rise until doubled.

      When risen, use a knife to mark the top of each roll with a cross. Bake at 425 about 20 minutes, until golden brown.

      When cooled, decorate the cross with powdered sugar icing.
