      DESCRIPTION
      Heath oatmeal toffee cookies

      SUMMARY
      Yield 0 File under Cookies Brownies Bars

      INSTRUCTIONS
      1 cup butter
      2 eggs
      2 cups packed brown sugar
      2 tsp vanilla
      1 3/4 cups flour
      1 tsp baking soda
      1 tsp cinnamon
      1/2 tsp salt
      3 cups quick cooking oats
      1 pkge heath toffee chips
      1 cup coconut

      heat oven 375*
      lightly grease cookie sheet.
      beat butter, eggs, brown sugar, and vanilla until well blended
      add flour, baking soda, cinnamon and salt blend well
      stir in oats, toffee bits and coconut with spoon
      drop dough by rounded spoonfulls about 2 inches apart onto cookie sheet bake 8 -10 mins. cool 1 min remove to wire rack

      I love chocolate so I add chocolate chips too. these come out soft and chewy if you under bake just a little. I use parchment instead of greasing because the toffee chips are hard to wash off when they melt
