INSTRUCTIONS
Gluten Free Baking Classics

1 cup shortening
1 cup granulated sugar
½ cup brown sugar
2 large eggs
1 tbsp vanilla
2 cups plus 2 Tbsp brown rice flour mix
1 ½ tsp baking soda
1 tsp xanthan gum
½ tsp salt
12 oz choc chips
1 cup nuts, optional

1 ¼ cup flour blend
1 tsp xanthan gum
½ tsp baking soda
¼ tsp salt
¼ cup shortening
¾ cup brown sugar
1/3 cup granulated sugar
1 tsp vanilla
1 egg
1 cup chocolate chips
¼ cup chopped nuts
Combine dry ingredients in a bowl until well blended.
In mixer, blend shortening and sugars until creamy. Mix in egg and vanilla. Blend in dry ingredients just until mixed, mix in choc chips and nuts.
Place dough well covered in the fridge for at least an hour.
Preheat oven to 350
Bake on parchemnt lined baking sheet 10 min
The reason I say to bake on a lined baking sheet is to protect the gluten free cookies from any cross contamination from other gluten containing items that have been baked on the cookie sheet.
