INSTRUCTIONS
German Apple Pancake
3 large eggs
2/3 cup milk or half and half
1 Tbsp. sugar
1/4 tsp. cinnamon
pinch of salt
½ cup flour ******CAN USE GLUTEN FREE FLOUR BLEND
Place in blender and combine on low. Set aside.
4 large apples, cored, peeled and sliced
6 Tbsp. butter
3 Tbsp. sugar
3/4 tsp. cinnamon
Spray nonstick oven proof skillet with non-stick cooking spray then melt butter in. Cook apples with sugar and cinnamon until soft. Pour batter on to apples and then bake at 450 for 15 minutes. If you do not have an oven proof skillet, butter a cake pan, put sauteed apples in the cake pan and continue with the recipe. When done you can serve in the pan as is or turn upside down onto serving plate and sprinkle with powdered sugar. Serves four barely. I make two for a family of five.
