Frozen Frittata

      A month or more ago, I mentioned in a "what did you cook" post that I had frozen one slice of Frittata to see if that food could survive the freezer. I thawed it in the microwave this morning. I can tell you that the Frittata was poor quality. The eggs were rubbery. The ham was inedible, because it was spongy. The potatoes fared good, but I'll never again freeze Frittata.

        I can't say I'm surprised, even commercially frozen products with eggs in them (sandwiches, etc) are, at best, mediocre.

          Thanks for reporting on the results Italian Cook. One of the joys of being on a baking site is that we do not all have to find out the answers by ourselves.
