      Farmer Cheese Cake from Friendship Dairy

      1 Cup graham cracker crumbs (or 1 Cup zweibach crumbs)
      2 Tbs. sugar
      1/3 Cup butter, melted
      Mix ingredients together and press into bottom and sides of 9-inch spring-form pan.

      24 oz. farmer cheese (preferably Friendship)
      1 Cup sugar
      6 eggs, separated
      1/4 tsp. salt
      scant 1/4 cup flour
      1 tsp. vanilla
      2 tsp. lemon juice
      rind of 1 lemon, grated
      1/2 cup heavy sweet cream

      Preheat oven at 325 F

      Mix together all ingredients except heavy cream and egg whites.

      Beat cream until whipped and fold into cheese mixture.
      Beat egg whites until stiff but not dry, and fold into mixture.

      Carefully pour mixture into prepared pan.

      Bake at 325 F for one hour, then turn off oven, open door and let stand in oven for one hour, or until room temperature. Then refrigerate.
