Dinner Rolls w/nutmeg

This is basically a modified Challah recipe. It reliably makes good rolls!
1/2 cup water
1 egg (or 1/4 cup egg substitute)
1/2 teaspoon salt
1 1/2 tablespoons sugar
1 1/2 tablespoons shortening
2 cups bread flour
1/4 cup instant mashed potatoes
1/2 teaspoon instant yeast
1/2 teaspoon freshly grated nutmeg
yolk and water glaze
I throw everything in the bread machine and use the dough cycle. You could use a mixer or do it by hand equally well.
Preheat oven to 375 degrees F.
Cut dough into 9 pieces, make into rolls. Spray 9 x 9 pan and add rolls equally spaced. Let rise until your finger leaves a dent when a roll is gently prodded.
Brush with yolk/water glaze. Add seeds (poppy or sesame are good) if desired.
Bake about 30 minutes. Works well to par-bake (about 25 minutes - until just beginning to brown) and finish (another 5 to 7 minutes) in the oven just before serving.
