I got it wrong (half right), but that's why I refrigerate everything.

I got it because I assumed condiments from a particular cooking culture would need to last without refrigeration. That said, I refrigerate everything because I do not use certain ingredients that quickly.

I picked fish sauce and soy sauce but then blew it with pickle relish! Should have known better.

Wowzer I got this one.But I keep it all in the fridge too,I've never used fish sauce.
