Carlene & Helen’s Cheese Straws

DESCRIPTION
These fabulous cheese straws are a tasty addition to any appetizer or tea table!
SUMMARY
Yield 0 Source Two 90+ year old friends Carlene and Helen File under baking, cheese straws, Misc. Recipes & Requests, sharp cheddar cheese
INGREDIENTS
1 lb extra sharp cheddar cheese
1 1/2 cups plain flour - sifted
1 stick butter, unsalted
1 teaspoon salt
1 teaspoon red pepper
INSTRUCTIONS
Melt butter and pour over grated cheese, blend well. Mix flour, salt, and pepper. Add to cheese and mix all together. Put through press. Bake at 350 degrees about 10-12 minutes. Test when cool. You may want to bake them 2 or 3 minutes more. It depends on the thickness of straws. Cool on rack. Store, when completely cool, in tins with tight tops.
Helen mixes hers in the food processor with the steel blade, after grating the cheese in the food processor.

msbelle, what do you mean by "put through press"?

Don't mean to intrude, but you have been waiting awhile. I believe they mean a cookie press. You might try to use the one that looks like a star or asterisk. Put the dough in the tube and squeeze out until you have a 'straw' however long you like. Maybe 6-8 inches, but they will break if too long. kathi
