Caramel Apple Cheesecake Bars

DESCRIPTION
Caramel Apple Cheesecake made into a bar. Perfect for that Holiday dessert platter!
SUMMARY

INGREDIENTS
Crust:
2 cups AP flour
1/2cup firmly packed brown sugar
1 cup (2 sticks) butter, softened
Filling:
2 (8-ounce) pkgs. Cream cheese, softened
1/2 cup sugar, plus 2 Tbsp, divided
2 large eggs
1 tsp vanilla extract
3 granny smith apples, peeled, cored and finely chopped
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Streusel Topping:
1 cup firmly packed brown sugar
1 cup AP flour
1/2cup quick cooking oats
1/2 cup (1stick) butter, softened
In a small bowl, combine all ingredients. Set aside.
1/2 cup caramel topping
INSTRUCTIONS
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13x9x2- inch baking pan lined with foil. Bake 15 minutes or until lightly browned.
In a large bowl or the KA mixer, beat the cream cheese with 1/2 cup sugar at medium speed until smooth. Add eggs one at a time. Add vanilla. Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 Tbsp sugar, cinnamon and nutmeg. Spoon evenly over cream cheese mixture.
Sprinkle with Streusel topping.
Bake 30 minutes, or until filling is set.
Drizzle with caramel topping
Changes: for the filling, I omitted the nutmeg and added 1/2 tsp KAF Apple Pie Spice.

mrscindy, would this caramel topping be the same as the Smuckers' Caramel Topping my DH loves on ice cream? Or is it something else, as in a recipe to make your own? Thanks... jej
