      Broiled Zucchini with Lemon, Mint and Garlic

      4 servings

      1 Tbs. olive oil
      1 garlic clove, crushed
      1 tsp. grated lemon zest
      4 medium zucchini, halved lengthwise
      salt and freshly ground pepper to taste
      2 Tbs. chopped fresh mint leaves
      2 Tbs. finely chopped red onion

      Preheat the broiler.

      Combine the olive oil, garlic, and lemon zest on a large serving platter. Add the zucchini halves, turning to coat, and rubbing the oil mixture evenly over each.

      Place the zucchini, cut side up, on the broiler pan or a baking sheet. Sprinkle with salt and pepper to taste. Set aside platter without wiping it clean.

      Broil zucchini close to the heat, turning as needed, until the zucchini are lightly browned, about 8 to 10 minutes. Remove from the broiler.

      Transfer the zucchini to the platter, brown-side up. Sprinkle evenly with the mint and red onion. Serve warm or at room temperature.

      Per serving 43 calories. 1 gm protein, 4 gm carbs, 3 gm fat, 0 mg cholesterol, 271 mg sodium.
