      Amish Friendship Starter & Care Instructions

      The beginning of many different breads and cakes.

      1/2 teaspoon yeast
      2 tablespoons warm water
      1 tablespoon sugar
      1 tablespoon vinegar
      1/2 teaspoon salt
      1/2 cup flour
      1/2 cup milk, room temperature

      1/2 cup flour
      1/2 cup sugar
      1/2 cup milk

      Dissolve yeast in warm water in a plastic or glass bowl. Add sugar, vinegar, salt, flour, and milk, and cover loosely with plastic wrap. Let stand in a warm place for 2 days to ferment. It will become bubbly and have a sour smell.

      Add 1/2 cup flour, 1/2 cup sugar, and 1/2 cup milk.

      You are now at "DAY 1." Follow instructions for Amish Friendship Batter.

      Amish Friendship Batter Instructions

      This can be kept and mixed in a plastic zipper bag. Just remember to let the excess air out when you "stir" the contents by mashing the bag.

      Use a glass or plastic bowl, and plastic or wooden spoon -- Do not use metal.
      Do not refrigerate.
      Keep loosely covered.

      Day 1: Do nothing.
      Day 2: Stir once.
      Day 3: Stir once.
      Day 4: Stir once.

      Day 5: Add 1 cup flour
      1 cup sugar
      1 cup milk

      Day 6: Stir once.
      Day 7: Stir once.
      Day 8: Stir once.
      Day 9: Stir once.

      Day 10: Add 1 cup flour
      1 cup sugar
      1 cup milk

      Put 1 cup of batter into each of 3 containers. Keep one for yourself, and give the other 2 to friends with a copy of these instructions and recipes for using the batter. Use the remaining batter in your recipe of choice.

      NOTES: If it will be a few days before you see a friend to give them their starter, label the container with the date of "day 1" so they do not become confused as to when to feed the starter by adding the other ingredients. Remember to stir batters daily while you have them!

      As long as you stir daily, you can actually postpone each feeding by up to 2 days. Just be sure there is a minimum of 5 days between feedings, and you bake your recipes on the day of the last feeding.
