I read an interesting story on the London Times website today about a plan to have schools in the UK serve venison. It appears the UK has a deer overpopulation problem and one approach to lowering the deer population would be to cull around 250,000 head a year and use the meat in school cafeterias.

We got a lot of 'mystery meat' in the dining halls at Northwestern, usually mutton.

A pilot project was fairly successful, 85% of those who tried venison-based meals said they'd eat it again.

The plan is not without opposition, called the 'Bambi effect'.

I'll eat venison anytime! Tonight I had a steak that I made mushroom and onions over it in the crockpot and then I cooked rice, leftover green lima beans and biscuits. Took all the leftover to my sister in law.

I'm so glad that you are enjoying the jam, Joan!

I roasted a butternut squash and an autumn frost squash on Monday, then pureed each separately in the food processor. The autumn frost squash will be for soup. I froze some of the butternut squash and will decide later what to do with the rest of it.

For dinner, we had more of the black-eyed peas with brown rice and ham.

I'm making meatloaf from the recipe on a Stovetop stuffing box. You mix ground beef with the stuffing mix, egg, water and bbq sauce. I also added some dried parsley and onion. It's in the oven now along with a potato. Will have it with fresh green beans.

First time I've made this, I'll report more on it later.

Dinner on Tuesday evening was turkey with noodles, mushrooms, and peas. I used the leftover turkey meat, nearly a pound of sliced mushrooms, the leftover gravy from our earlier chicken combined with the deglazing liquid from when I roasted the half turkey breast, and some leftover evaporated milk. The pasta was fettucine. I spilled some of the deglazing liquid in taking it out of the refrigerator, which resulted in Scott and I both doing clean-up on the refrigerator, the top of the freezer door, and the floor. Sigh.

BA, I sympathize with you. A few years ago I was at my neighbors for Christmas Eve, after everyone had gone they were putting away the food. I saw that the cookies I had brought were uncovered so not wanting them to dry out I covered them. Then, a few moments later, she was taking the pasta sauce to the fridge and the handle of the pot broke off, causing the pot to fly to the floor and getting sauce all over the kitchen. The cookies I had just covered had sauce on the cover (yea, the cookies were saved!). Anyway, they bid me farewell and spent the next 30 minutes or so cleaning up sauce.

The meatloaf, I made a half recipe as I only had 1 pound of ground beef. I divided the meatloaf into 3 equal loaves so to take the guesswork out of how much to have at any one meal. It came out pretty good, I enjoyed it. I'll make it again. I'm thinking this might be good with ground turkey or chicken.

My meat loaf recipe is very simple:

                                  2 pounds of ground beef
                                  1 egg
                                  3/4 cup rolled oats
                                  1 can mushrooms, chopped
about a cup of cheese, plus more to sprinkle on top later on
Some kind of tomato product such as ketchup or tomato paste. Recently I've been using the tomato relish that I made from last year's tomato crop (tomatoes, red peppers, onions, sugar, salt, vinegar) it works great in a meatloaf, a half-cup of salsa would probably work well, too.
                                  Salt and pepper to taste.

Mix it thoroughly, put it in a 9 inch loaf pan and bake it at 350 for about an hour or until it reaches 180 degrees. Towards the end, I usually sprinkle cheese on top, sometime I brush ketchup on first.

As it cools, I drain off the excess grease.

This makes about 9 1" slices weighing around 5.5 ounces each. I usually log it as 10 carbs and 300 calories.
