We had leftover soup from the freezer for dinner tonight, with enough left for tomorrow. I had planned it so that I would not need to cook the day we returned home. We had it with Rye-Barley Crispbread left from the trip.

December 21, 2025 at 7:57 pm #48010I started a two day soup project - well, I'm making it a two day project around everything else I need to do.
This morning I took a couple of rotisserie chicken carcasses out of the freezer and made chicken stock and then I roasted 3 chicken breasts for Ina's Chicken Pot Pie Soup - tomorrow I will prepare the vegetables and make the soup. I need to have something easy on hand for the long work days this week - I often forget to have something prepared and end up with tuna or cheese sandwiches - warm soup seems better.

December 23, 2025 at 7:13 pm #48017Tonight I had leftover sausages, with wieners and coleslaw. I cooked a pan of squash and onions tonight to make squash casserole tomorrow.
December 23, 2025 at 11:09 pm #48019For dinner on Tuesday, I had thawed a cooked half turkey breast from Thanksgiving and the leftover gravy I had frozen as well. I sauteed sliced carrots and celery, chopped red bell peppers (the ones that finally ripened on the plants we brought inside to overwinter), and a half pound of sliced mushrooms in avocado oil. I added the gravy and simmered, then added the cut-up turkey (prepared by Scott). I boiled some noodles, being sure to drain the about two minutes early, then combined them with the turkey mixture. We have enough for a couple more dinners.

December 25, 2025 at 7:07 pm #48029For Christmas dinner on Thursday, I made Maple-Glazed Pork Tenderloin and muddled mashed potatoes. We also had apple sauce from the freezer and microwaved fresh broccoli.

December 26, 2025 at 2:30 pm #48033I've been on the go everyday Christmas Eve was at my friends we had Baked spaghetti, veggie tray, deviled eggs, corn casserole and a lot of baked goods , rolls desserts.Lots of fun playing games too! Christmas day I went to my sister in loves home and we had a great dinner of baked ham, potato salad, rutabagas , mac and cheese , mustard greens ,and pickled beets. Then played games all afternoon then I went back to my friends and enjoyed till late. Tonight I'm going to play poker and I had a ham sandwich.I pray you all had a Merry Christmas that celebrate and to the ones who celebrate Hanukkah I pray all went well also.
December 26, 2025 at 4:45 pm #48040My son's doing most of the cooking this week. I made the angel food cake, bagels, and I did the oyster stew on Christmas Eve, he's done all the rest. We had ham on Christmas, we're having onion soup tonight.
